At 48h Pizza e Gnocchi Bar, we’ve always been about pushing the boundaries of Italian cuisine while staying rooted in tradition. Well, we’re beyond excited to share that our brand new fusion menu is officially live!

This time, we’re going somewhere extraordinary—blending authentic Italian recipes with Australian Indigenous First Nations ingredients. It’s a one-of-a-kind collaboration with Indigenous-owned food enterprise Warndu, and we can’t wait for you to experience it.

A Fusion of Cultures: Italian Meets Australian First Nations Ingredients

This isn’t just another menu launch. It’s a celebration of two rich culinary histories—Italy’s timeless techniques paired with Australia’s unique native ingredients. Inspired by the land, its people, and their heritage, we’ve created dishes that we hope honour both traditions.

Here’s what you can expect from this new menu

Antipasti 

  • Bush’etta: A native twist on bruschetta with Warndu’s bush tomato tapenade, dried bush tomatoes, native pepper, and saltbush.
  • Canguro Salame with Burrata: A bold pairing of wild kangaroo salami (infused with anise myrtle) and creamy Italian burrata, topped with native thyme oil.
  • Caprese: A reimagined classic featuring mozzarella, bush tomato tapenade, saltbush, and wattleseed.

Gnocchi

All our gnocchi are handmade using gluten-free flour, making them lighter and easier to enjoy!

  • Gnocchi Verde: Tossed in a Warrigal greens and macadamia pesto, finished with toasted macadamias, saltbush, and Warndu’s signature dukkah.

Pasta

Hand-rolled pasta with a touch of native magic!

  • Native Seafood Tagliatelle: Made with lemon myrtle-infused dough, served with local prawns, native greens, and a sprinkle of native pepper.

Pizza

As always, our pizze are crafted with love and available gluten-free upon request.

  • Canguro Pizza: Topped with tomato sauce, wild kangaroo salami, crispy saltbush, and olives.

Dolci (Desserts)

  • Native Gelato: Creamy vanilla gelato drizzled with olive oil, cracked pepper berry, and Davidson plum chips.
  • Wattleseed Pannacotta: Served with fresh strawberries, muntries, quandong chips, and wattleseed balsamic vinegar.
  • Lemon Sorbetto: Featuring zesty finger lime and fresh mint.

And for a perfect finishing touch, enjoy a pot of Native Strawberry Gum Tea—an aromatic delight unlike anything you’ve tried before.

We’re proud to acknowledge the Boon Wurrung people of the Kulin Nation, the traditional custodians of the land on which we operate. With every dish on this menu, we pay tribute to their history, culture, and connection to the environment.
