who is LUCIANO SORBILLO?
Luciano Sorbillo, is a prominent figure in the world of Neapolitan pizza-making, his life and work are deeply intertwined with the rich tradition of pizza in Naples, Italy. Born into a family with a long-standing legacy in the pizza industry, Sorbillo’s story begins on the historic Via dei Tribunali, where his grandparents established the family’s first pizzeria in 1935. This establishment became a hub for passing down the closely guarded secrets of pizza-making within the family, with Sorbillo’s aunt Esterina stepping up as a pioneering pizzaiola to support her large family.
Sorbillo’s upbringing was steeped in the traditions of Neapolitan pizza, as he and his siblings were initiated into the craft from a young age, learning the art of pizza-making through observation and hands-on experience. From washing dishes to preparing ingredients by hand, Sorbillo and his siblings underwent a rigorous apprenticeship that instilled in them a profound respect for the craft and its heritage. Despite the challenges and sacrifices involved, Sorbillo’s dedication to mastering the art of pizza-making paid off, culminating in his status as one of the foremost authorities on Neapolitan pizza.
Luciano’s hope for the future of traditional pizza-making is twofold: he envisions greater recognition for pizzaioli as artisans rather than mere merchants, and he advocates for the preservation of traditional pizza-making techniques as a subject of study in culinary institutes—a testament to his enduring commitment to upholding the legacy of Neapolitan pizza.
